Oreo Dirt Cake

This stuff is AMAZING!! I mean it. Any time I take it to gatherings and parties it gets devoured faster than you can imagine, and I always get bombarded with "What is in that?!"

So make it, try it, and don't eat the whole thing at once. No seriously.. it'll make you sick.

 

Oreo Dirt Cake

Ingredients:

  • 1 package Oreos (crushed)
  • (2) 8oz packages Cream Cheese
  • 3 cups powdered sugar
  • 1 large package Vanilla Pudding
  • 1 large package Chocolate Pudding
  • 4 cups Milk
  • 1 container Extra Creamy Cool Whip 

 

Crush up your Oreos (I put them in a baggie and beat them with a rolling pin), and press them into the bottom of a 9x13 pan. Reserve some Oreos for the top.

Mix up the cream cheese and powdered sugar until smooth. Spread it over the Oreos.

Whisk vanilla pudding mix and 2 cups of milk in a bowl until smooth. Pour over the cream cheese. Refrigerate for 15 minutes.

Whisk chocolate pudding mix and 2 cups of milk until smooth. Pour over the vanilla pudding.

Spread cool whip over the chocolate pudding.

Now listen up, this is a necessary step! Eat the rest of the cool whip.

......what? You don't do that?

Sprinkle the rest of the Oreos on top, and refrigerate for at least 4 hours before serving.

Oh. Muh. Gosh. Delish!

Recipe - Soft & Chewy Chocolate Chip Cookies | Christmas Edition

Do you love soft, chewy chocolate chip cookies with a crispy edge? Then these are the cookies for you. These cookies stay soft for days and they have that classic chocolate chip cookie flavor. 

Because of the upcoming holidays, I decided to make these with red and green M&Ms. Aren't they festive?

It took me YEARS to find the recipe of chocolate chip cookies that I could be satisfied with. I just kept changing and adjusting each time I made them until I finally got the result I wanted. 

Let's get started.

Soft and Chewy Chocolate Chip Cookies

1 cup (2 sticks) salted butter, at room temperature (I use land o lakes)
1/2 cup granulated sugar
3/4 cup firmly packed dark brown sugar
2 eggs
1 tsp pure vanilla extract
2 cups all-purpose flour
3.4 oz package vanilla pudding mix
1 tsp baking powder
1 tsp baking soda (fresh)
2 1/4 cups milk chocolate chips (or in this case, one bag of Christmas M&Ms)

Preheat the oven to 360 degrees F. Line baking sheets with parchment paper.

In a large bowl using your awesome hand mixer from your mother-in-law, combine the butter, granulated sugar and brown sugar.


Beat in the eggs, one at a time. Add the vanilla and mix well.
Gradually add the dry ingredients. Beat until all of the flour mixture is combined, but NO NOT OVERMIX.


Mix in the chocolate chips.


Use a tablespoon to spoon dough on prepared baking sheets 2" apart. Make sure they are even amounts of dough.


Bake the cookies for about 10 minutes then watch carefully. You want the cookies to barely be browning on the sides. They will look underdone, but this is best for chewy cookies.


Remove from oven. 
Allow the cookies to sit on the baking sheet for about 2 minutes. Move cookies to a wire rack. Cool completely. Serve with a glass of milk.

Recipe - Crab & Corn Chowder

Crab & Corn Chowder

8 bacon slices
1 medium bell pepper, diced
1 medium onion, diced
1 tbsp minced garlic (the kind you get in the jar)
1 tbsp celery salt
1 tbsp garlic powder
32 oz chicken broth
3 tbsp corn starch
1 can corn kernels
1 can of diced new potatoes
1 lb lump crab meat (I used 3 cans of fancy lump crabmeat)
1 cup heavy whipping cream
1 can of diced tomatoes (I drain them well through a strainer, so they don't turn the chowder pink)
Salt & pepper to taste 

Put a little oil in a skillet and fry that bacon up!

I like to use turkey bacon. But you can use whatever kind of bacon you like!

While the bacon's a fryin', chop up your bell pepper and onion. 

Remove and put the bacon on a paper towel, then add the diced veggies to the skillet.

Saute the veggies until the onions turn clear.  Add in garlic, celery salt, and garlic powder and sautee for another minute or so.

Pour a little bit of chicken broth to a dutch oven, then add the veggies.

Sift in the corn starch. Then add the corn, potatoes, and the rest of the chicken broth. Stir and simmer for about 15 minutes.

Add in the crab (with juice), tomatoes (drained), and heavy cream.

Add salt and pepper to taste. Simmer for 20 minutes. Stir often.

Crumble the bacon on top, and serve!
